Breakfast Casserole

12 eggs
1- 1/2 lbs. sausage (hot, regular or mild)
3 cups milk
1- 1/2 tsp. dry mustard
5 slices of bread torn to small pieces (it's ok to leave the crust on)
1- 1/2 cups shredded cheddar cheese

Combine all ingredients in a large bowl. Mix well. Grease a 9 x 13 glass dish. Pour ingredients into the pan. Let sit in fridge overnight. Bake at 350* for 1 hour or until set. Cut into squares.
Serves 6-7.

*I usually will make this for Christmas morning along with other stuff. Another thing I add just before serving is homemade salsa on the top. This is delicious!

Chicken Parmesan (easy)

4 boneless, skinless chicken breasts
2 cans cream of chicken soup
3/4 cup fresh Parmesan cheese, grated
1/4 - 1/2 cup water
salt and pepper to taste

Combine all ingredients in crockpot. Cook all day on low or 2 hours on high. Serve over vermicelli noodles.

*I made this for dinner tonight- it was delicious! I added 2 cans cream of chicken soup and 1 can of cream of celery soup, and 1/4 cup water. I like to have more sauce for left-overs. I added the full amount on the cheese, but I don't think I will add that much next time, it was almost too much!

BEEF STUFFED ZUCCHINI

4 medium zucchini
1 pound ground beef
½ cup chopped onion
1 egg
3/4 cup marinara or spaghetti sauce
1/4 cup seasoned bread crumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup (4 ounces) shredded Monterey Jack cheese, divided

Additional marinara or spaghetti sauce

Cut zucchini in half lengthwise, cut a thin slice from the bottom of each with a sharp knife to allow zucchini to sit flat. Scoop out pulp, leaving 1/4-in shells.

Place shells in an ungreased 13 in x 9 in x 2 in microwave-safe dish. Turn off microwave turntable setting. Cover and microwave on high for 3 minutes or until crisp tender, drain and set aside.

Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink, drain. Remove from the heat; stir in the egg, marinara sauce, bread crumbs, salt, pepper, and 1/2 cup cheese.

Spoon about 1/4 cup into each shell.. Microwave, uncovered, on high for 4 minutes. Sprinkle with remaining cheese. Microwave 3-4 minutes longer or until a thermometer inserted into filling reads 160 deg. Serve with additional marinara sauce. 4 Servings

Note: If Your Microwave Does Not Have a Turntable Setting, Microwave Zucchini in Two Batches, Using an 11 x 7 x 2 Microwave-safe dish.

Tortellini soup

3/4 cup chopped onion
1 teaspoon minced garlic
1 Tablespoon olive oil
2 cans (14 1/2 oz each) chicken broth
2 cups water
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
1 package tortellini (I buy mine from Costco, but any kind will work)
1 can (14 1/2 oz each) diced tomatoes- undrained
1 pkg. frozen chopped spinach- thawed- squeeze dry
3 Tablespoon shredded Parmesan

In a large saucepan, saute onion, and garlic until tender in oil.
Add broth, water, sugar, salt, and pepper.
Bring to a boil
Add tortellini; cook for 5-8 minutes or until tender.
Reduce heat.
Stir in tomatoes and spinach.
Heat thorough.
Sprinkle with Parmesan just before serving.
Makes about 6 serving.

*I usually double this recipe to have some for left over. My mom has tried this with chicken and said it is really good! You may have to add more water if you want a thinner soup, or less water for thicker soup. You have to make the call! This is delicious with homemade bread!

Spaghetti Pie

4 oz. spaghetti noodles
1 egg
1/3 cup parmesan cheese
1 Tablespoon margarine or butter

Cook spaghetti according to directions. Drain. Mix egg, cheese, and butter together. Add spaghetti. Stir until spaghetti is well coated. Press into greased 9" pie plate.

Mix 1 egg and 1 cup cottage cheese; spread over crust.
*I like to drain the liquid out of the cottage cheese so it doesn't turn out runny. I have done it both ways, they both taste the same!

In a skillet, cook:
1/2 lb. hamburger
1/4 cup green pepper- chopped
1 medium onion- chopped
opt. add Italian sausage and mushrooms

Stir in 3/4 cup spaghetti sauce. Pour over cottage cheese mixture. Bake 20 minutes at 350. Grate 1/2 cup mozzarella over the top and return to oven until cheese melts.

*I always double the recipe because left-overs are almost better than the first night! When I double it, I put in a 9 x 13 dish and add about 5-10 minutes longer. This is one of Brandon's favorites!

Chicken Enchiladas

5 chicken breasts, cooked and shredded
1 medium onion
8 oz. cream cheese (fat free works)
1 cup milk
1 can cream of chicken soup
1 can salsa
10-12 flour tortillas (I use Costco kind, they are dee-lish!)
1 small can sliced olives
Shredded cheddar cheese
Chopped green onion

Pre-heat oven to 350*. In one bowl, mix together chicken, onion and cream cheese. In a separate bowl, mix together the milk, soup and salsa....this is your sauce! You can mix this in the blender if you want less chunks. Divide chicken mixture into as many tortillas for easier rolling. Place in a sprayed 9 x 13 inch pan side by side. Pour sauce over the tortilla rolls. Sprinkle black olives, chopped green onion and cheddar cheese over the top. Bake covered for 30 minutes, then uncover and bake an additional 10 minutes. Serve like lasagna, cut into squares.

*This recipe is a regular at our hosue. I like to omit the green onions, I add green chilies instead. Tasty!

Cheesy Crockpot Chicken

4 Boneless, skinless chicken breasts (frozen or thawed)
2 cans cream of chicken soup
1 can cheddar cheese soup
garlic salt
pepper

Rinse chicken and sprinkle with garlic salt and pepper. Let sit for 15 minutes. Place chicken in crockpot in layers. Mix undiluted soups together and pour over chicken. If using frozen chicken, cook on high for 4-5 hours; thawed- low for 4-5 hours. The soup will make a creamy, cheesy sauce which you can serve over rice, noodles, or mashed potatoes.

*My family really likes this recipe. I have made it several times and played with the amount of soups, salt, etc. I serve it over rice and serve with peas; the chicken falls apart! YUM!

I am not the world's best cook. I have to admit that I don't cook all the time for my family, but I love to look at recipes and try to find the one my kids will try!
